When he sends his monks back, simply retreat and attack another side of his camp.
Try to raid his villagers around his town centers with knights, cavalry archers, or hussars and kill as many villagers as possible. In late game, you could try to simply ignore his monks. Also, building a defensive castle (preferably on a hill) in front of your base, and walling the sides of your base should be able to defend you for a long time, they outrange monks and can kill them instantly. Note that monks are very micro-intensive, in castle age they lack Theocracy, which means that your friend needs to control each of his monk individually to use them effectively. The key to deal with monks is outnumbering them. Try to put some real pressure on him in the castle age, crossbowmen cost less than half the gold of a monk (45 versus 100), and have just 2 range less (with fletching and bodkin arrow researched). Mongols have massive potential for sure.I think you're overestimating the monks, sure they are very effective of converting and healing expensive units and change the tide of the battle, but they have significant drawbacks. If a landmark gets caught far out of base it can be tough to reclaim. There are lots of cute things you can do with moving buildings, the Deer Stones landmark is a perfect example because you can move it offensively to allow your units to easily kite your opponent's while on a raid but it's really tricky/risky to use.
It's possible that CB players hadn't played enough games in a large enough demographic, but some of them like ClassicWinds did have hundreds of games played with the Mongols and they didn't move buildings too much so we'll have to see. Moving buildings isn't very fast and takes extra clicks. Even Gers aren't always moved because it can be more efficient and (let's be honest) easier to just build a new one if the drop off location is far away from the previous one. You'd think so, but it just ends up being a couple of buildings because stone trickle isn't that fast vs.
